MPPP's Heritage Day Peri free-range wings!

There's nothing that we like more at Moores-Pitt Premium Poultry than a whole day dedicated to celebrating SA's Heritage over hot coals to brown some free-range MPPP produce, a couple cold one's and great company.

Here's a quick recipe from founder and MD Alistair Moores-Pitt for crispy, peri-peri chicken wings:

INGREDIENTS:
- for the wings:
  • 8 MPPP free-range chicken wings
  • 2 tsp's smoked paprika
  • 1 tbs Cajun spice
  • 1 tsp freshly crushed garlic (this is debatable, can add more if you wish)
  • +/- 1/4 cup olive oil
  • Salt and pepper (+/- 1 tsp each)
- for the dipping sauce:
  • 1 cup plain Greek yogurt
  • Juice of 1/2 lemon
  • 1 bunch chopped dill/ parsley
  • 2 sweet n Tangy gherkins
  • Salt and pepper to taste
  • Sugar to taste
METHOD:

- for the wings:

1. In a big bowl mix all ingredients together and coat the wings well. Cover with clingwrap and marinade for min 4 hours

2. Braai on medium heat coals (so as not to burn the spices on the wings) until crispy and cooked through

- for the dipping sauce:

1. Mix all ingredients together in a small bowl

Serve on a platter, garnish with some fresh parsley or dill, crack a cold one and ENJOY!
